Currently I am trying to create a script that will open the application and run the scan. This script can then be scheduled using the built in scheduler. Not sure if I am barking up the wrong tree though.

Unfortunately not yet. We're going to add such command-line options in the next version after rewriting of some internals.

The new version which will allow us to add the scheduling functions is still in development. Unfortunately it is not possible to add scheduling to the current version (1.6.x).

No, as I have already mentioned, it is not possible to implement scheduling in 1.6.x (which includes 1.6.8). The new version where it will be possible is still in development.
